Jasmine Rice Infused with Garlic Oil

2 cloves garlic, smashed

1 tablespoon olive oil

1 cup Delta Blues Jasmine Rice

2 cups water

1 teaspoon salt


In a heavy-bottomed pot, heat olive oil and garlic over medium heat until garlic is golden brown. Remove the garlic and add in the jasmine rice. Stir the rice, making sure that each grain is coated with oil. Cook, stirring constantly, for about a minute. Carefully add in water and salt. Bring the water to a boil, stir once, reduce heat to low, and cover with a tight-fitting lid. Cook for about 15 minutes. The water should be absorbed, and the grains should be tender. Remove from heat and let steam for 5-10 minutes. Fluff and enjoy.

This rice is delicious paired with Ropa Vieja.
