Tropical Coconut Rice Salad

1 cup Delta Blues Jasmine Rice
1 cup unsweetened coconut milk
1 cup water
½ tablespoon butter
2 teaspoons vanilla, divided
2 teaspoons sugar
1 cup Greek yogurt
1-2 tablespoons honey (to taste)
½ cup unsweetened toasted coconut flakes
1 cup mango, chopped

1 cup pineapple, chopped

Combine jasmine rice, coconut milk, water, butter, 1 teaspoon vanilla, and sugar in a pot. Bring to a boil, stir once, cover, and reduce heat to lowest setting. Cook for 15 minutes or until rice is tender. Remove from heat and let steam for ten minutes (you can skip this step if you are short on time).

While rice is cooking, combine yogurt, honey, and remaining 1 teaspoon vanilla.

To assemble the salad, gently stir together the rice, yogurt mixture, and remaining ingredients.
